Double D Food Engineering (Broxburn, West Lothian) has developed a high temperature travelling oven for pizza and flat bread production, which can bake a 10-inch pizza in 1-2 minutes at 750?F.Pizza, quiche, pastries, pies, savouries, morning rolls and confectionery can all be baked consistently at high volumes on the firm’s Revoband Travelling Oven, it claims.Double D’s airflow technology means that customers can fulfil many different demands, it says. “The Revoband Travelling Oven can be fully programmed and accurately timed to bake each product exactly how you want it,” says sales and marketing director Ian Wallace.
Weight Watchers has extended its popular reduced-fat cakes range with the launch of Almond Cake Slices, made from a combination of almond sponge, pastry, jam and almonds.Now, under licence from Weight Watchers, Anthony Alan Foods (Barnsley, Yorkshire) has taken the conventional recipe and re-invented the Almond Cake Slice as a reduced-fat, healthy option.Weight Watchers expects it to be a big hit with health-conscious consumers, generating extra business for the retailer.The Almond Cake Slices contain 2.6g of fat and 95 calories per slice, and have a Weight Watchers points value of 1.5. They are available in packs of six with an RRP of £1.25.
Enterprise Foods says it is set to create a £100 million turnover local supply network, sourcing craft bread on behalf of retail and foodservice giants.The Scottish company is working with the UK’s number one convenience retailer and a foodservice supplier, believed to be Compass, on the new business. It turned over £23m in 2006, MD John McCormick told British Baker.He commented: “The sad thing is that if you look into the bakery market, the craft side is declining, because product is not being presented properly. We can present the craft baker as a solution, not just a difficult animal to deal with.”The East Kilbride-based company acts as a third party, he explained, putting requests from its big customers through to the most appropriate craft baker in the local area. It uses electronic systems to invoice on the bakers’ behalf.The company has now technically appraised 200 craft bakers from all around the UK, to create a register of craft bakers suitable to supply big operators.McCormick said: “Bakery is a small part of the big customers’ overall spend, but it tends to be difficult to deal with; you end up with hundreds of different suppliers around the UK. With this system, we manage fresh bakery products for them, putting them in touch with local suppliers of genuine craft bread.”Enterprise formerly owned bakery businesses California Cake Company and Campbell’s Cake Company but sold to Finsbury Food Group in 2005. The company also sold off its Patisserie UK division, in a management buyout last year, to focus on the supply chain business.Enterprise’ sales were £27 million for the year to 1 July, 2006, with pre-tax profits at £270,000.
As part of a national expansion programme, Leeds-based Bagel Nash hopes to open an extra 43 shops, up from the current total of seven, over the next three years.Retail director Rob Bywell said the bagel company is set to open clusters of retail outlets in major cities across the north of England. “We have established ourselves in Leeds,” Bywell told British Baker. “We are now looking to build a national brand and will start opening stores in Manchester, Liverpool, Hull and Huddersfield.”The first of its new branches is due to open at the Arndale Centre in Manchester in March.Bagel Nash recently added muffins to its range of products. “These are doing very well,” added Bywell. “We are also looking at introducing cakes and pastries.”The bagel firm offers Fairtrade teas and coffee and plans to introduce an organic coffee.”People like to come to us because we offer something different,” said Bywell. “As people are driven by the media and are becoming more health conscious, they like to see bagels and products made fresh in front of them.”Bagel Nash offers a variety of products for different tastes and budgets. Its bagels range in price from £1.25 to £3.20. The current bagel of the month contains duck and hoisin sauce.”We are currently looking at developing a wheat-free bagel in our bakery in Meanwood [Leeds], to accommodate special dietary requirements,” said Bywell.
